In search of the best Yamada Nishiki in Japan, we asked the producer “Mr. Tokura” in Akitsu, Kato City, who cultivates and harvests the best Yamada Nishiki from Hyogo Prefecture’s special A district every year, We use the highest quality Yamada Nishiki, which has been cultivated by law, organic fertilizer, and inagi hanging drying.
It has a fragrance and mellow taste suitable for the ultimate Junmai Daiginjo.
This is the “ultimate daiginjo” that Tatsuriki aims for, a sake brewery that aims to become a Romanée-Conti in Japan.
